Raw Mango Brinjal Sambar / Mavinakai Badhane Saaru - Simple Karnataka Style

Mavinakai or raw mango and badhane / brinjal saaru or sambar is a very
popular recipe in South India. Very tangy mouth watering sambar gives
altogether a different taste to Sambar. Do try this way and relish with your
family.
When in season we include raw mangoes in our daily recipes in many ways, mango chitranna, mango sambar, mango instant pickles, mango kosambari and
many more.
This is again a very unique recipe of South India, in Tamil "Manga Katrika Sambar" / mango sambar and my most favorite one
too. My mom will dry mango slices to store and use them in this curry when mangoes are not in season. The taste differs from the fresh mango sambar but still one
who loves this sambar will no further need to wait for the season... to eat
this delicious gravy 😊.
This is the same method as we make usual sambar with very little variation
to add adequate coconut grated and removing tamarind. Brinjals are cut in
long slices for this. But this taste very different and unique from any other sambar.
Mavinakai Badhane Saaru | Raw Mango and Brinjal Sambar Recipe - Karnataka style

Ingredients for Mavinakai badhane saaru recipe - Badhanekai / Brinjal - 1/4 Kg
- Raw mango - small
- Onion - 1 big
- Tomato - 1 big
- Tur dal - 1 cup -cooked
- Fresh Coconut grated - 4 to 5 tablespoons
For Seasoning - Oil - 2 teaspoons
- Mustard - 1/4 teaspoon
- Jeera / Cumin - 1/4 teaspoon

Instructions Cook Togari bele / Tur dal in a cooker pan Heat a sauce pan with a table spoon oil, add mustard and jeera/ cumin Add in chopped onions, curry leaves, brinjal and mangoes and saute for a minute Add turmeric, sambar powder ( chilli powder ) saute and add 1/4 cup water allow to cook for 2 to 3 minutes Add salt and finely chopped tomatoes and cook for few minutes until vegetables are half cooked, if required add little more water of about 1/2 cup Add cooked dal / tur dal along with water (stock) mix them well add more water required for the sambar consistency. Stir well and cook for about 5 to 10 minutes Adjust salt and spice to ones taste, once vegetables are cooked add in grated fresh coconut Add pinch of hing / asafoetida and mix well Tasty mouth watering tangy Mavinakai badhane saaru / mango brinjal sambar is ready to taste with hot rice and ghee

Note:
Can add in drumstick along with brinjal
You can also add tamarind if the sourness in raw mango is less

How to make Mavinakai badhane saaru / Mango brinjal sambar with Step-by-step pictures
1. Cook Togari bele / Tur dal in a cooker pan
2. Heat a sauce pan with a table spoon oil, add mustard and jeera/
