Today's menu is easy-to cook Nugge Soppu Palya / Drumstick leaves stir fry, Very few ingredients to cook this healthy dish. Nugge Soppu Palya is well matched with Sambar rice or simple Pepper rasam rice.

Nugge Soppu Palya as in Kannada | Drumstick leaves stir fry : are filled with very rich nutrition. Rich in Vitamins, Folate, Magnesium, Calcium and mainly known for its Iron rich nutrient. And many more health and nutrient values... I am not mentioning all over here, as many of us know... as well. many clinch thier face while having this because of the trivial bitterness the leaves posses and gulp in only for the sake of its nutrients, some leaves contain slight bitterness, not all !!!. But cooking it in this way with flavorful garlic, toor dal, freshly grated coconut and the seasoning spices not only overshadows its bitterness but also enhances its taste.

Nugge Soppu is not only filled with nutrition but very tasty too. We in South India make this regularly in many ways, some of drumstick leaves recipes are  Stir fry, Soup, Rasam, Sambar, Bassaru.. and also use them in nugge soppu rotti either in Ragi Rotti or Akki Rotti, Paddu, Uttappam and also while making Ghee at home. Very versatile leaves.

We do use NuggeKaye / Drumstick in Sambar, Kurma, Huli, Palya... So many dishes with one vegetable .. all being very tasty.. I will try to post all of them in my Blog. Not to forget - I have to mention here ... in Tamil Nadu, use of the flowers from this tree is very common in Soups, Chutney, Sambar, Stir fry, Vada ...etc. The list goes on. This also is tasty and healthy.. :) 

You may think why I am using nutrient filled and must try - several times, only because this is easily available in fresh form and not expensive for tons of nutritious filled in this. Please make use of this vegetable and leaves when available.

Nugge Soppu Palya | Moringa-Drumstick leaves Stir Fry 

Nugge Soppu palya, Drumstick leaves stir fry

Cuisine: Indian / South Indian

Cook time: 15 minutes


Ingredients 

  1. Nugge Soppu / drumstick leaves  
  2. Onions - 2 small - finely chopped 
  3. Garlic cloves - 3 to 4 - crushed 
  4. Cooked Toor dal - 2 tablespoons
  5. Grated Coconut - 2 tablespoons
Seasoning 
  1. oil - 1 to 2 teaspoons
  2. Mustard seeds - 1/2 teaspoon
  3. Urad dal - 1/2 teaspoon
  4. Chana dal - 1/2 teaspoon
  5. Red Chillies - 2 to 3





Instructions  

  1. Wash Nugge Soppu / Drumstick leaves and keep aside
  2. Heat 2 teaspoons of oil in a fry pan, add mustard seeds
  3. Once mustard splutters add Channa dal and urad dal - Saute for few minutes
  4. Add Onions, garlic and red chillies, Saute until onions turn to pink color
  5. Add washed nugge soppu/ drumstick leaves
  6. Saute for 2 to 3 minutes, Add Salt and 1/4 cup water and cook the leaves well
  7. Once Nugge Soppu / Drumstick leaves are cooked, Add cooked Tur dal 

  8. Stir them well , Add grated coconut 

  9. Give a thorough mix and switch off the flame 


Tips:

Do not turn channa and urad to dark brown, keep them to light pink

Fry onions to slight color change to pink

Add only little water required for cooking the leaves  

Note:

If you want to skip coconut, then add roasted and coarsely crushed peanuts 

Do try Dal rasam which goes very well with Nugge soppu Palya

How to make Nugge Soppu Palya | Moringa-Drumstick leaves Stir Fry With Step-By-Step Pictures

Wash Nugge Soppu / Drumstick leaves and keep aside


Heat 2 teaspoons of oil in a fry pan, add mustard seeds


Once mustard splutters add Channa dal and urad dal - Saute for few minutes 


Add Onions, garlic and red chillies, Saute until onions turn to pink color

Saute for 2 to 3 minutes
