Puffed Rice is been made for centuries with the simplest method like popping rice just like popcorns, they use different techniques to make, this one being hot salt frying. Salt is heated in pan then parboiled or pre-cooked rice is added to heated salt and stirred until all rice grains are puffed.

Ingredients
1. Kadlepuri / mandakki /puffed rice 2 medium cups
2. Onions
sliced – 1 medium
3. For tempering– oil, mustard, urad dhal, chana dal, curry leaves, green chillies, salt
4. Lemon juice - 1 teaspoon

5. Turmeric - 1/4 teaspoon
Method
1. First rinse puffed rice or kadlepuri in water and squeeze all the water and
remove to plate.
2. Heat oil
and add all the seasoning items - mustard, urad dhal, chana dal, curry leaves, saute until urad and chana turns brown
3. Add sliced onions and green chillies slit, fry till onions
are cooked to translucent and then add turmeric
4. Then add the soft kadlepuri that was rinsed in water, mix well
5. Remove from flame and then add lemon juice , mix well and serve
