Snake Gourd egg stir fry | How to make Padavalakai Palya with egg

Snake gourd egg stir fry or Padavalakai Palya is a very simple and easy to cook yet tasty recipe. People who prefer without egg can skip egg and follow the rest of the steps to make Padavalakai palya without egg. I have used only onions and spices in this recipe which makes the dish easy and quick, sauté snake gourd with onions and green chillies, can also add chilli powder. Once snake gourd is cooked break eggs into this and stir fry. This becomes great side dish for rasam rice, sambar rice or You can make this for breakfast and pair with chapati or roti.

Snake gourd / padavalakai falls under watery vegetables category and its benefits are vast including managing diabetes. Snake gourd also known as padwal or podalangai or potlakaya is a natural antibiotic. Rich in fibre also contains protein and carbohydrates. This is on healthy side of this vegetable coming to taste its tremendous in Snake gourd Kootu, Palya, bajji or bonda as well.

Ingredients:

 

Snake gourd/ Padavalakai – 1

Onion – 1 small finely chopped

Curry leaves – few

Chilli powder – 1 1/2 teaspoons

Turmeric – 1/4 teaspoon

Eggs – 3

 

Tempering

Oil -2 teaspoons

Mustard – 1/4 teaspoon

Jeera – 1/4 teaspoon

Urad dal - 1/4 teaspoon

Chana dal - 1/4 teaspoon

 


Method:

 

Chop snake gourd and onions to fine pieces

Heat a pan with 2 teaspoons of oil, add mustard and jeera, urad dal and chana dal

once mustard splutter add chopped onions and sauté for about 3 minutes

add chopped snake gourd/ padavalakai and sauté  

add chilli powder, turmeric and salt and give a good mix

add 1/4 cup water, cover and cook until snake gourd is cooked

now break eggs and add to this and do not mix for about 2 minutes

let the eggs get cooked before mixing, then stir all of them well

adjust salt and spice at this stage and stir until eggs are cooked well

Note:

  • Don't mix the eggs immediate after adding them, allow eggs to get cooked for a while, this way you get eggs in large lumps.  Else eggs will be scrambled to soft which doesn’t taste as much as a large chunks of eggs.
  • You can also add pepper powder at the finishing stage of the dish
  • And also can prefer adding green chillies finely chopped for more spicy
  • You can also Skip the eggs and follow rest of the steps to prepare – padavalakai palya without eggs

How to make with Step-by-step Pictures


1. Wash and Chop snake gourd and onions to fine pieces

2. Heat a pan with 2 teaspoons of oil, add mustard and jeera


3. Once mustard splutter add chopped onions and sauté for about 3 minutes and add in chopped snake gourd and stir well


4. add chilli powder, turmeric and salt and give a good mix


5. add 1/4 cup water, cover and cook until snake gourd is cooked


6. now break eggs and add to this and do not mix for about 2 minutes - keep the heat on low flame


7. let the eggs get cooked before mixing, then stir all of them well
