Paddu Recipe | How to make simple yet traditional paddu

Paddu is a very traditional and simple recipe made from sour idli/dosa
batter, here I have shown a very simple method with few basic
ingredients, this can be varied with adding on some more extra
ingredients to get varieties depending on availability of
ingredients…. Like adding carrot grated, beetroot grated, roasted
peanuts, sprouted lentils (green gram , black chickpeas…), grated or
finely chopped fresh coconut, along with curry leaves, pudina or lots
of coriander .. to give distinct taste each time .. and vary these as
per children or family members taste-bud & demand… this is most
liked by elderly members and also by children in a family .. this does
not need any accompaniment, as this tastes delicious and spicy by
itself. Paddu can be a
breakfast or
snack
Paddu recipe can be made sweet as well - by adding Jaggery and coconut, fry coconut in ghee and add to the batter. You can make idli or dosa batter as usual and the remaining batter after making idli/ dosa can be refrigerated, the next day or even after two days in fridge can be used for making perfect paddu. I have sauteed some finely chopped onions, grated carrots and curry leaves and added to the sour batter. This makes simple and tasty
Ingredients:
- Sour Idli Batter - 1 cup
- Onions Finely Chopped - 1 medium size
- Green Chillies or red chillies - 2
- Salt to taste
- Tempering –

oil -1 teaspoon
-
mustard 1/4
teaspoon
-
Jeera (cumin seeds) – 1/4
teaspoon
-
urad dal – 1/4
teaspoon
-
chana dal- 1/4
teaspoon
-
curry leaves – few
- oil -1 teaspoon
- mustard 1/4 teaspoon
- Jeera (cumin seeds) – 1/4 teaspoon
- urad dal – 1/4 teaspoon
- chana dal- 1/4 teaspoon
- curry leaves – few
Method:
- Heat a pan add oil and add all tempering items fry until urad dal and Chana dhal is browned
- Add chopped onions and chillies and fry until onion turns transparent
- Add Carrots grated and sauté for about 3 minutes
- Add this to the batter, add salt and mix well. Batter for paddu is ready
- Now heat the paddu pan well and add oil in all moulds, pour the batter to fill all the moulds, keep on medium flame and cook both sides, until brown on both sides and remove to serving plate
Hot paddus are ready to taste … try this without fail,
good idea if children hate to eat beets and carrots, just grate and add them
in this.
Tips:
If batter is in shortage, then add required quantity of rava or semolina (chiroti rava) but this needs to be soaked in batter for 5 mins before preparing paddus. Adding rava also makes paddu crispier.Healthy Tips for this recipe:
- Add green gram sprouts along with onions and fry, this gives crunchy taste to paddus
- Adding roasted peanuts also gives crunchy taste
- Beetroot and carrot grated and fried along with onions, gives different flavour altogether
