Kurma is a South Indian spicy gravy recipe made with coconut
as base. Mixed vegetables like potatoes, carrot, beans, fresh green peas,
brinjal, drumstick, capsicum, cauliflower are used in veg kurma recipes.
Spiciness coming from whole spices cloves, cinnamon, ginger, garlic and
chillies. Vegetable korma as called in North is a good combination
for mild and flavorful Ghee rice or Pulao and also for plain rice, chapati
and dosa. Lets learn how to make kurma.
Veg Kurma recipe can be made with mixed vegetables or just
peas and potato or just with potato. I used potatoes, green peas and
brinjal. Onions and veggies are Sautéed in oil and then kurma masala with coconut ginger, garlic,
cloves, cinnamon is added and cooked. This vegetable kurma becomes a very
spicy and rich gravy and served for Ghee rice.

rice or Pulao, onion-tomato-curd raita and papad is a festive or special
food spread. I made this on a week-end to enjoy with my family.

Ingredients for Veg Kurma

Fresh green peas - 1 cup

Onion - 1 small

Brinjal - 2

Potato - 1

Tomato - 1

Curry leaves - few
For Grinding

Coconut - 1/2 cup

Ginger - 1 inch
-
Garlic - 7 pods
-
Cloves - 5
-
Cinnamon - 2 pieces
-
Chilli powder or Sambar powder - 2 teaspoons

Turmeric - 1/4 teaspoon

Tomato - 1/2 or 1 small

Instructions

Cut all vegetables - potato, brinjal, onions

In a mixer jar add Coconut, ginger, garlic, cloves,
cinnamon, chilli powder, turmeric and grind to fine
paste add tomato also and grind

Heat 2 teaspoons oil in a pan add chopped veggies and
onions, curry leaves and Sauté for 2 to 3 minutes

Add green peas and Sauté

Add ground masala
-
Mix all together well and add required water and
salt

Once vegetables are cooked to 3/4 add
tomatoes

Cook for 4 to 5 minutes or until vegetables are
cooked

Spicy and tasty Veg kurma is ready to serve

Serve with Ghee rice, raita and papad

Note:
Add vegetables like carrot, beans, potatoes, green peas, cauliflower,
capsicum, brinjal, drumstick - on availability
Add cauliflower and capsicum at the end as they cook fast
Poppy seeds or few cashews can also be added to give rich texture to
the Vegetable kurma
Home made sambar powder can be used for this Kurma
If chilli powder from store is used then add coriander powder as well
for grinding

FAQ's
What is Kurma or Korma?
Kurma is comman name in South India, this is made with coconut. whole
spices like cinnamon, clove and ginder, garlic which tenders good flavor
to kurma. Traditionally poppy seeds and cashews will be grounded to fine
paste with coconut, to give volume and creamy texture to the kurma.
Whereas Korma is comman name in North India, coconut is replaced with
yogurt and cream and whole spices are replaced with Garam masala powder,
coriander powder.
What are different varieties of Kurma?
Mix Vegetable Kurma - we can use potatoes, carrots, fresh peas,
cauliflower, capsicum, brinjal, drumstick, beans
Or can use only one veg like potato or drumstick they too taste
good
Chicken Kurma / Mutton Kurma - to the same base chicken or Mutton can
used. Combination for Ghee rice, chapati, roti, pulkas, dosa and also
idli.
Panner Korma / Egg Korma - In North India - the usual ingredient for
Korma will be Panner, or Egg - tastes excellent with Naans.
Is Korma Gravy or Curry recipe?
Korma usually is a curry recipe, less watery or thick consistency to eat
with Rotis and Phulkas
Whereas Kurma in South India is a Gravy recipe, to go well with Ghee rice
or Plain Pulao/ Pulav.
