Ghee rice Kurma
Ghee rice or Pulao is a traditional rice item made with Jeera samba or Jeerage Samba rice and ghee. In this recipe whole spices, onions, cashews, mint leaves, peas are sautéed in ghee and rice is added to this, then cooked in pressure cooker or simmered until rice is cooked to get mild and flavorful but very tasty rice recipe and is served with Vegetable Kurma or Chicken or Mutton Curry usually.
Ghee rice can also be made with usual or daily rice, but when made with Jeera samba or Jeerage Samba or Seeraga Samba rice the flavor is excellent, Jeera samba rice or Jeerage sambha rice is special rice with strong aroma used only for Ghee rice or Pulao and also in Biryani recipes. This becomes a special food during any special occasion or serving guests.
We at our homes make this Ghee rice or Pulao with Mixed vegetable kurma or Traditional Chicken or Mutton Curry.
Today, I made this flavorful ghee rice with kurma, and served with onion-tomato-curd raita and papad. This is an apt spread for birthday / anniversary parties as well.
Using of coconut milk in this Pulao recipe which also adds on flavor to this dish is common, but we can cook this even without coconut milk. Jeerage samba rice is cooked in whole spices, cashew, pudina / mint and lots of ghee to bring out best version of Ghee rice or Pulao. This is known as plain pulao, since no vegetables are added and this needs accomplishment like Kurma. Ghee rice in cooker is the simple method to prepare a delicious Ghee rice or Pulao or Nei Choru - do try this method without fail. Kids love this for its ghee flavor.

Ingredients for Ghee rice- Jeera Samba / Jeeraga Samba rice - 3 cups
- Onions - 2 small
- Garlic cloves - 10 to 15
- Pudina / mint leaves - 1/2 cup
- Green chillies - 2
- Fresh green peas - 1/2 cup
For Seasoning - Oil - 3 tablespoons
- Ghee - 3 tablespoons
- Cloves - 6
- Cinnamon - 2 pieces
- Bay leaf - 1
- Cashews - 10
For Coarse Grinding - Ginger - 2 inches
- Garlic - 1 full or 25 to 30 pods
- Cloves - 5
- Cinnamon - 2 pieces

Instructions
Measure Jeera samba rice, wash and soak for about 15 minutes - add water and soak Heat Cooker pan and add Ghee and oil Once ghee and oil heats up add whole spices ( bay leaf, cloves, cinnamon, cardamom), cashews and garlic pods - Saute for 2 to 3 mins and add sliced onions
Saute for 2 minutes and then add coarsely crushed ginger, garlic and clove, cinnamon Saute until raw flavor from ginger garlic is gone Add green chillies , Pudina / mint leaves and Fresh green peas Saute well for about 3 to 4 minutes, Add salt and soaked rice Mix rice with other ingredients gently, without breaking rice grains - Add water in the ratio 1 : 1.5 ( 1 measure rice , 1.5 measure water )
Adjust salt and close the cooker lid and wait for 2 whistles Once pressure is released then open and mix the rice gently Finally flavorful Ghee rice or Pulao is ready to be served hot with Kurma

Note:
Add oil and ghee, only ghee makes the rice hard when cooled
Ghee rice or plain pulao can be cooked in open pan rather than pressure cooker as well. Simmer for about 10 minutes in closed pan with occasional stirring
Can also use regular rice but when Jeera samba rice or Jeerage Samba rice used gives a distinct taste to Ghee rice or Pulao

Jeerage Samba or Jeera Samba or Seeraga Samba Rice
Jeera Samba or Jeerage Samba or Seeraga Samba Rice is rice known for its rich aroma and this is a short grain similar to Jeera or Cummin seeds hence the name Jeera Samba. This rice is used in Ghee rice / Pulao and in Biryani's. Biryani is also made with Basmathi rice which is a long grain.

How to make Ghee rice recipe | Pulao recipe with Step-by-step pictures
1. Measure Jeera samba rice, wash and soak for about 15 minutes
2. Heat Cooker pan and add Ghee and oil
3. Once ghee and oil heats up add whole spices ( bay leaf, cloves, cinnamon, cardamom) and cashews and also garlic cloves
4. Saute for 2 to 3 mins

What is the difference between ghee rice and biryani rice ?
Ghee rice is a mild spicy but flavorful rice made with flavorful rice Jeera samba rice Served with Kurma. Flavor to Ghee rice comes from Jeera samba rice and whole spices added in this preparation. Whereas biryani rice is again a flavorful but spicy rice, mixed vegetables or chicken / mutton is used in this preparation. Biryani is a one pot rice served with onion raita.
