Uddina Vade | Urad Dal Vada | Black Gram fritters – South Indian Breakfast Recipe
Uddina vade / Urad dal vada is healthy South Indian recipe prepared for breakfast or snacks. Uddina vade is
often eaten along with Idli chutney and sambar, popular menu in all restaurants
here. Today I have come up with a very crispy version of urad dal vada, usually
only salt and pepper goes in this menu, but I have shown with onions and green
chillies along with curry and coriander leaves to make them crispier.

Urad dal is
well known for its rich protein source. When Vada or fritters are made with
Uddina bele / urad dal / black gram dal they are not only tasty but are healthy, good food for growing children.
We have
grown up eating uddina vada, my mom would prepare on a Sunday uddina vade itself as a breakfast along with spicy chutney that would make our day !!!. Not
sure how many would prepare only vada for breakfast but we loved this as a
morning feast. The nutritive vadas are a wholesome and filling meal which
provides energy you require for the whole day.
So even I
make uddina vade and chutney for a Sunday breakfast, when we need not make any
special recipes for rest of the day. Vadas can also be prepared for lunch as a side
dish which goes really well with sambar. In our home, like many others prepare
it on festive days as a part of the elaborate meal. The one such dish that
everyone loves are vadas. Not to mention that many people have vadas even
before the meal is prepared. Such is the fondness the yummy traditional uddina vade
has, that can probably have any replacement. It's time you too prepare them…

IngredientsUrad dal – 2 cups Onions – 2 small Green chillies – 4 finely chopped Peppercorns – ¼ teaspoon Rice flour - 2 tablespoons Oil – for deep fry Curry leaves – few Coriander leaves – few strands

Note:
- Soak urad dal only for about 2 to 3 hours, not required more than three hours. vada absorbs more oil when left soaked for long hours
- By adding rice flour you get crispy Uddina vade
- Add salt only before frying them, do not add salt and store the batter. then batter turns out watery.
- Can divide the batter into portions and fry in batches as and when required and add salt only to that portion you need to fry immediate
- Avoid chopped green chillies for kids, instead add pepper powder
- Instead of grinding peppercorns with urad dal, can add coarsely powdered pepper to the batter, after grinding the dal
- Dip hand in water and make vadas, this way batter will not stick to your hands while making urad vada / uddina vade / black gram fritters
