Haal Obbattu or Haal Holige is a traditional sweet dish prepared in  Karnataka and some parts of Tamil Nadu. the name may seem complex but its a very simple sweet made with jaggery, coconut and wheat flour. 'haalu' means milk, but milk is never used in the making of this delicacy, infact it is the payasa that is referred to as haalu.

How to make traditional jaggery sweet Haal Obbattu (ಹಾಲು ಹೋಳಿಗೆ)

Payasa is made with coconut and jaggery and then puri is made and dipped in the payasa. This gives a special taste when puris are soaked well. This special sweet is not made on any festive day in our family but can be prepared on any day without much effort.

this dish is much loved by my daughter, so i sometimes prepare this in the morning for breakfast, so that she can eat through the day as she eats in small quantity. This sweet is made with jaggery so considered as healthy food for children.

 My friends make this payasa in different way they use milk and sugar as basic ingredients. Whereas payasa made with coconut and jaggery gives authentic taste for this haalu obbattu. the dainty sweet is as unique as it is simple. so anybody looking for trying new things and experimenting with their dessert, this one is apt. ( this taste good even after refrigerating)

Haal Obbattu | Haalu Holige Recipe

Cook time: 25 minutes


Ingredients for Haal Obbattu recipe 


For Payasa 

  1. Coconut - 1/2 of the coconut
  2. Cardamom / elaichi - 3 
  3. Jaggery - 1 cup (about 1/4 kg )


For Puri
  1. Wheat flour - 1 cup 
  2. Oil - for deep fry

Instructions  

  1. Grind coconut and cardamom / elaichi to fine paste ( add dry roasted kaskas / poppy seeds - this is optional)

  2. Dissolve jaggery in a pan with little water and strain out any dust 

  3. Place the filtered jaggery syrup on flame and add in coconut paste and mix well 

  4. Add required water and boil for 3 to 4 minutes - keep this payasa watery only then puri's can absorb this syrup well 

  5. Once this is boiled for few minutes remove from flame - payasa is ready  

  6. Now prepare puri - for this kneed the wheat flour with pinch of salt and water and rest the dough for 5 minutes before making puri 

  7. Take small balls and roll into thin puri's, make as thin as possible for crispier puri

  8. Heat oil in a pan and fry puri

  9. Take out the puri and dip in the payasa

  10. Remove from the payasa with help of two spatulas and place in a plate 

  11. Repeat this for all the puri's and inbetween add in some payasa on top of the soaked puri's 

  12. Tasty haal obbattu is ready - eat it hot and also leave to soak and eat - very yummy traditional sweet is ready in few minutes at home


Note:

Maida / all purpose flour  can be used to make puri's instead of wheat 

Adjust jaggery quantity to your taste

Keep the payasa watery - puri can absorb the syrup well

    1. Hi Vasu,
      I am not using any specific cup for measurement, but if i measure any cup for one ingredient same cup i use up for measuring other ingredients for the recipe requirement

      here for 1/2 coconut i took 1/4 kg of jaggery (which measured 1 cup), and same quantity flour.

      Delete
