Instant and quick coconut rice | Tasty Tenginakai Anna
Coconut rice is an instant and quick to make rice item for main course or breakfast. Many variants can be found in South India, now I have come up with a simple to make at any time and by anyone. Coconut rice can be the choice for anytime if cooked rice is ready or can be made with leftover rice as well, tastes equally good.
Coconut rice is also made on many special occasions ...like Prasad for Goddess during Navratri or on any other festive occasions coconut rice will be one rice item among other special spread. Since we do not use onions, garlic this can be perfect for any festival food.
Coconut Instant rice can also be a good select to serve guest as it can be made in few minutes without much effort and can also be served with some fried items like chips, capsicum bajji, banana bajji, onion bajji etc.., as side dish.
Coconut rice / Thenginakai Anna is one of the favorite foods in our house, I prefer this when ever i am lazy to make a curry and a side dish for that curry. Coconut rice made this way is tasty when eaten hot or even for lunch box, but remember to roast coconut well if packed for lunch box. it is an authentic dish of the deccan region where coconut is a staple crop, this is a go-to recipe in my home given its simplicity and the trivial time it consumes. This is my daughter's favorite recipe who is, not to mention, a picky eater, hence on taking note of this, it can be a favorite of your child too.
Fresh coconut grated embellished with green chillies, urad and chana dal, mustard and jeera and also lots of curry leaves go into this instant coconut rice. One can also add cashews to make this rich in taste.

Tips:
- Use only cooled rice, if hot rice is used without cooling, rice tend to break
- Saute green chillies well in oil so that it releases all its flavor in oil
Note:
- I have showed for small quantity of rice in the pictures, but follow the ingredients list for 4 cups of rice or alter according to the quantity of rice.
- You can reduce or increase the green chillies as per spice required

How to make Instant and quick coconut rice - Tenginakai Anna with step-by-step pictures
1. Cook rice and keep it aside to cool
2. Heat 2 to 3 tablespoons of oil and add mustard and jeera
3. Once mustard splutters, add urad and chana dal and saute for few minutes until they start to change color (but they should not turn brown)
4. Add finely chopped green chillies and curry leaves, saute for 2 minutes
5. Add coconut grated again saute for few more minutes
6. Add salt and mix well and turn off the flame
7. Now add cooked and cooled rice to this and mix altogether well
8. Tasty coconut rice is ready to serve.
