Chakli recipe shown here is super easy and really quick to make- Instant Chakli. These crispy crunchy rice chakkuli or chakli or murukku make a great snack at any time of the day or side dish for sambar-rice, rasam-rice or curd-rice

Chakli recipe – Murukku or Chakli is a popular South Indian Snack item, typically made from rice. Rice flour is mixed with the dal flour like… chana dal, urad dal, green moong dal or fried gram. Fried gram is also commonly known as chutney kalle. The flours are mixed with water to make soft dough along with the spices. This dough is then filled in special mould or chakli maker, pressed to spiral shapes into oil. It is then deep fried to get crunchy snack, which can be stored for many days. This easy healthy snack is perfect for anytime you’re on the go.
Chakli are of different varieties in different parts of the country. Amongst all, south Indian way -  variety of Murukku recipe has gained prominence.

Chakli or murukku has many variations depending on the ingredients and its proportions that go in making chakli recipes. The varieties include plain murukku, mullu murukku, butter murukku, ring murukku, garlic murukku, coconut murukku, mint murukku or even sweet murukku and murukku or chakli can also be made with wheat flour or besan flour. The shapes also vary from spiral, long, ribbon and also handmade chakli are famous in South India.

Ingredients for Chakli

Rice flour – 1 cup
Fried gram – powdered – 1/4 cup
Jeera / cumin – 1/4 teaspoon
Black or white sesame / ellu – 1/4 teaspoon
Chilli powder – 1/2 teaspoon
Salt for seasoning
Oil for deep fry

 

Method

    1. In a bowl add chilli powder, jeera and mix well with water of about 3 tablespoons
    2. Add in rice flour and powdered fried-gram , ellu / sesame seeds and salt
    3. Mix all the ingredients together before adding water ; so that it blends well
    4. To this mixture, add about 2 tablespoons of hot oil or butter, mix well thoroughly – adding hot oil gives crunchiness to the chalki
    5. Now by sprinkling water, mix them until you get a soft dough – do not add too much water this will absorb too much oil while frying, or do not make a tight dough then it becomes difficult to make chakli, make a perfect dough so that it is soft enough to get through the chakli maker
    6. Grease the chakli maker and fill in the dough
    7. Heat oil in the pan for deep frying. Once oil gets hot, reduce the heat to medium and press the chakli directly to the oil or you can press the chakli on a greased spatula and immerse them once oil is heated up
    8. Leave them to get cooked for few minutes – if you try to turn them immediate they will tend to break
    9. After few minutes, flip them to the other side and fry till it turns light brown – do not over-fry. Remove when they are light brown, chaklis get cooked in the heat even after removing from the oil
    10. Cool them thoroughly before storing them in the air-tight box

Tips:

  • If the ingredients are taken is large quantity, then mix all the dry ingredients first and then separate to smaller quantities from that and mix with water - make it in batches. After mixing water, this should be fried instantly or else chakli may absorb more oil.
  • You can mix all the dry ingredients a day before making chakli – rice flour, fried-chana dal flour, jeera, sesame seeds, chilli powder and salt. Keep them stored in dry container, whenever needed you can mix hot oil and water and make instant chakli
  • If water is added more than required, then add extra rice and fried-dal flour in the same proportion  
  • Fry the chakli until it turns light brown but make sure its cooked well, if you let them to turn dark color then chakli would be burnt

   

Notes:

  • Chakli when made broken are more crunchier than with the perfect spiral shapes, so do not worry if broken, I have shown in picture broken chakli for this purpose.
  • Sesame seeds bring in crunch to the chakli, so do not miss them
  • Even if the chakli or murukku maker is not available you can make them by hand, just roll them to thickness of little finger and make a ring out of this and deep fry, this is kodubale in kannada. This is equally tasty. But never miss to make this quick and fast chakli or murukku

How to Make with step-by-step picture

In a bowl - add chilli powder, jeera and mix well with water of about 3 tablespoons



Add in Sesame seeds / ellu 



To this add rice flour



Take fried-chana in a mixer jar and grind to powder 



Add the powdered fried-chana to the bowl



Heat 2 tablespoons of oil and add to the bowl



Mix the dry ingredients well before adding the water


Sprinkling water, mix it to the soft dough

Place the single holed-star-shaped or three-holed-star-shaped plate in the chakli      maker / mould

 
Grease the chakli maker with oil. Take small portions of the dough and fill it in the chakli maker

Press the chakli into the oil 



 Leave it to cook for few minutes on medium heat and flip over to the other side

 fry them until it turns light brown on both sides and remove them to the plate
