Mutton Karam
Saaru / Mutton Saaru Recipe is an easy and simple, homemade Indian Mutton gravy will become your
regular recipe, thereafter. Tender pieces of meat are cooked in spicy gravy to
make a soupy or rasam consistency that goes prefect with a bowl of rice. First
time a non-veg recipe on my blog. I wanted to keep this dish very traditional
and simple as usual.
This was the recipe, pending from long time, since I started this blog. I was not
sure about posting this recipe the reason being I was doubtful of how people would
receive it as a breakfast recipe. I know many people who are apprehensive of
having meat or rice in the morning.
But then I
realised, in south India we prefer rice items for morning breakfast, like
Pongal, idli - dosa, pulav, vangi bath, mango rice, etc… here-go! I decided to post this.

try for Sunday breakfast, for a change from your usual and favorite ones.
From those
days we do have a habit of having hot rice with Mutton Karam Saaru, you might
be wondering what’s karam saaru? Its, nothing but a tiny treat to your taste
buds before a great meal…. Like a trailer before a movie…
Mutton Karam Saaru/ Mutton Gravy / mutton saaru is nothing but the tender succulent mutton being cooked with only basic spices, and its cooked without coconut or any garam masala, to taste its best with mild spices and bring in the complete flavor of mutton. This flavorful gravy is most liked by kids as this is mild and healthier version of gravy for kids.
Mutton karam
saaru is a family favorite recipe that people have cherished for ages in my
family. This existed from my grand mom’s time ‘As a practice Sunday is a
non-veg meal preparation day, and mutton has been a favorite since ancient
times in our Indian cuisine! this is practice, from many decades in our homes,
I guess most of them agree with this. Since it’s a non-veg usually the lunch
preparation will take a longer time and family members need to stay up hungry
till then, this was an idea to keep the members 'quiet' for some time. while they
cooked tender mutton in a large vessels with just salt and few basic spices,
before adding strong masala to this, as the mutton cooking time is
comparatively high - need to add masala after mutton is completely cooked,
after the mutton is well cooked - some part of the mutton stock and well cooked
mutton is removed and kept aside, this is then mixed with the rice and served,
to keep away hunger until the lunch is prepared.
The remaining
stock is cooked with strong masala to make a flavorful spicy thick gravy which
goes in for lunch menu with pulao/ghee rice to give in a party spin. Lets not
go in detail of this now, as we only focus on late morning Sunday breakfast
that’s none other than delicious spicy mutton karam saaru.
Even today we
follow this and Sunday breakfast is rice and mutton karam saaru. This actually
is very tasty even more tastier than the gravy with masala's. Hence I decided to
share this here. Believe me this is extremely easy recipe, a basic homemade
curry with just the right spices to go in to kick start your Sunday. Using
pressure cooker to cook mutton for the fall-off-the-bone tender deliciousness.
Another
reason for loving this curry is the minimal ingredients that go into this, just
onions, spice powders, tomatoes, coriander and curry-leaves keeping simple but
trust me, making this so very luscious and a beginner would love to try this
first. Kids love this the most. You can have this with the left over rice from
the previous night. What other reason one needs to get into cooking space to
grab ingredients start cooking this simple curry on Sunday or any day.
It might
sound a bit bragging in the first place, but when you taste this you realise
how true this is.

Ingredients
- Mutton – 1/2 kg
- Onions medium size – 1, thinly sliced
- Curry leaves – few
- Cloves – 3
- Cinnamon – 2
- Tomato – 1 small
- Oil – 1 tablespoon
- Curry leaves
For grinding
- Onions medium size – 2 – roughly chopped
- Chilli powder – 2 teaspoons
- Coriander powder – 3 teaspoons
- Turmeric – 1/4 teaspoon
- Tomato – 1 small or half the big tomato
- Curry leaves and coriander leaves – few strands
- Oil – 1/2 teaspoon
Method
For grinding
- Heat 1/2 teaspoon oil in a sauce pan over medium flame and add roughly cut onions and curry leaves to it
- Fry until onions turn brown
- Add chilli powder, coriander powder and turmeric powder and sauté for just 2 minutes and remove from heat
- Once this is cooled, grind all these with coriander leaves first coarsely and then add half the tomato (if big tomato) and grind to smooth paste adding little water
For gravy
- Heat 2 teaspoons oil in a cooker pan and add in cloves and cinnamon sauté for 2 minutes this would release its flavor in oil.
- Add thinly sliced onions and curry leaves, fry them until onions are browned.
- Add the mutton, turmeric and fry well until all the water evaporates.
- Then add the ground paste and give a good stir until all the pieces are coated well, add finely chopped tomato and rock salt and fry for about four to five minutes or until its dry
- Now add 3 cups of water add some more water as required for the mutton to cook, you can add more water as we want this gravy in soupy consistent. Mix well and close cooker lid and cook on the low flame for 5 to 6 whistles or until meat is cooked well.
- Open the lid only when pressure from cooker is completely released
- Spicy delicious mutton gravy is ready to be served with rice in a bowl.
