Quick and Simple peanut ladoo - How to make soft groundnut

Peanut ladoo recipe- can be made this simple? which is healthy for all. I never knew nutritious ladoo with great taste can be made this quick and simple, until I tried few years back. Once this came out tasty I was thrilled and I make this atleast once a month. This healthy and delicious peanut ladoo is loved by all in our family, and I am sure you will also like.
Peanuts are
filled with proteins, fibre and good fat. Roasted peanuts can be eaten as it
is, which is simple and healthy or with jaggery which doubles the taste. Just
these two ingredients can be used to make soft and healthy ladoo. Kids
favourite ladoo ! Peanuts are always linked with ‘our father of the nation
Gandhi ji’, he mentioned this as poor man’s badam, we can include this nut in our
daily food but in moderate amount. I had previously posted Kadlekai unde or Pakada unde which is made with roasted whole peanuts, sesame, fried gram, dry
coconut, that's very crunchy. The Peanut laddu recipe that is shown here is simple and easy to make
with just two ingredients this is made with crushed peanuts and jaggery,
results in softer ladoos.
Peanut ladoo / Kadlekai Unde / Groundnut laddu / Shenga Unde

Ingredients
1. Peanuts/ groundnuts/
Kadlekai – 1 cup
2. Jaggery Powdered – 3/4 cup
3. Roasted Sesame / black til
/ ellu – 1/4 cup ( this is optional)

Method
1. Roast the peanuts well on medium flame and cool
them
2. In a mixer jar – add roasted
peanuts, jaggery powdered and sesame / ellu
3. Run the mixer in intervals –
giving a good mix – until peanuts and jaggery are blended well
4. Remove to a bowl and make ladoos of required size

Note:
- Grind for just about a minute and give a good mix, and then grind again, you need to grind in intervals. If you run mixer continuously – lumps will be formed due to the oil present in the peanuts.
- Sesame / black ellu is optional, If you like can add roasted ellu / sesame gives additional taste to the peanut ladoo
- use roasted peanuts without removing the skin
- do not grind to fine powder keep it to coarse - gives a crunch
