-Vangi bath a very popular breakfast recipe of Karnataka. It’s made very simple
with Vangi bath powder available at home.
Vangi bath main ingredient being brinjal,
typically made from mysore brinjal or long green brinjal. Such easy classic- sautéed
thin strips of brinjals with spice powder / vangi bath powder and cook to bring
it to a thick gravy consistent and then mix cooked rice. This also tastes good
with left-over rice. Traditional cooking doesn’t have to be time consuming –
vangi bath is one among many- pretty simple to make.

This is perfect for a bachelors and
beginners who venture to kitchen not too often. This is usually prepared for
breakfast, lunch or carry-on-lunch-box. This is usual item in Karnataka weddings.
Karnataka cuisine is incomplete without Vangi bath.
Vangi bath powder can be easily made at home and stored for more than six months just like you store sambar powder. Once the powder is ready at home it becomes easy to make Vangi bath

Method
1. Heat three to four teaspoons of oil in the pan, and all the tempering items sauté for few minutes, until urad and channa dhal change to brown colour
2. Add sliced brinjal and fry well till brinjal is cooked
3. Add vangi bath powder, turmeric and salt fry well in oil add ¼ to ½ cup of water and cook till the gravy thickens
4. Add cooked rice and mix well, adjust the salt
Vangi bath is ready to serve.

3. ಬೇಯಿಸಿದ ಅಕ್ಕಿ - 2 ರಿಂದ 3 ಕಪ್.
4. ಮಸಾಲೆ - ಎಣ್ಣೆ, ಕರಿಬೇವಿನ ಎಲೆಗಳು, ಉದ್ದಿನ ಬೇಳೆ, ಕಡಲೆ ಬೇಳೆ, ಅರಿಶಿನ ಪುಡಿ, ಉಪ್ಪು.
