Soft Akki roti - soft rice flour rotti recipe
Let's see how to make a super Soft Akki Roti using only rice flour. This roti is even softer than dosa, and can be prepared in just about 15 minutes. Soft akki roti shown here is bland and need accomplishment like tomato sambar which is specially made to go with this Akki roti.
Considering the minimum ingredients that go into its making, it is really an easy and quick recipe to prepare. This soft and textured akki roti is perpetual part of the typical Karnataka cuisine. It is quite very popular in the state and I have retained its authentic and simplicity that is known for. It is straightly brought out of my grandmother's kitchen that I would cherish on and really believe you would too - once you try. This is my second version of Akki roti, I have already posted Masala Akki roti in this blog, which is also quite easy to prepare and makes for a healthy and tasty breakfast recipe.
Soft Akki Roti
Here roti flour is cooked before making rotis hence they come out very soft, this roti remains soft even after they cool down, hence this can be an ideal option for lunch boxes or an outing meal.
Rice flour
Today, I have used ready packed rice flour available in stores, just to show how easy this rice flour akki rotti is to make. You can also wash rice (raw rice) and fan dry and powder in mixer or get them done from flour mill. You can also grind to flour without washing the rice, which can be stored for many days.
For this recipe, boil some water and add in rice flour and mix thoroughly with out any lumps, and then knead to soft dough using your hands and roll them to roti shape and cook on tava.
Simple tip to get the soft dough without lumps for beginners, take 1/3 water for 1 portion of flour, once flour absorbs all water and becomes dry then add in hot water little by little and knead them well to get soft dough and with no lumps.

Tips:
You can also dip your hands in cold water while kneading - to comfort your hands kneading with hot dough
Keep the remaining dough covered, its not easy to roll the rotis if the dough is completely cooled or dried out
Dust dry rice flour lavishly before rolling, this dough so soft that tends to stick
Dust out extra dry flour with dry cloth and also keep the tava clean before cooking each rotis
Add few drops of ghee or oil both sides of rotis, so that tava does not become black without oiling
Take only small portions to make patties to make small rotis, bigger rotis tend to break - this tip is for beginners
Note:
Clean up the tava with dry cloth after each roti, dry flour left on hot tava turns dark and sticks to roti
I have included many pictures, as this is slightly tedious job
Roll the rotis gently, if you press hard like chapati or wheat rotis, they stick to the base and break

How to make Second version Akki Roti - soft rice flour rotti recipe with step-by-step pictures
Boil about 1 or 1 1/ 2 cups of water with pinch of salt added thatOnce water boils, remove extra water separately, leave only 1/3 of a cup in the pan and then add measured rice flour and mix well
Add little more hot water (that was removed and kept aside) if required, remember to keep the dough slightly dry as shown in picture and switch off the flame.
Cover and leave to rest for about one minute
After a minute remove the entire dough to a large plate
Roll the patties to small rotis gently, sprinkle dry rice flour on the rolling pin, this way rotis doesn't stick while rolling
Heat tava and cook them both sides evenly, apply few drops of ghee and cook
Since the rotis are rolled using lots of dry flour, dust away extra flour with the dry cloth
Cook both sides till brown spots appear
