How many of us know we can use the vegetable peels effectively in our cuisine. Even i was not aware until few years back when my mom cleaned and kept the peel of the ridge gourd aside, when i asked her to discard this. why do you have to through away the nutrient values that nature has took so much effort to give us? she asked ...I was amazed,until then i thought the peels are waste 😢
She prepared a delicious recipe out of that, Majjige huli which was very simple but tasty. I came to know the benefits of the peel only then to read on the internet.
This became another add on curry along with the main one for rice. So that we could eat a bit more of rice, variety of curry in our menu for the day.
As I already mentioned in my earlier blogs, our great grand parents and moms were so creative and to make variety of recipes to insist the family members to eat more and also not to drop the benefits of them, they always looked forward to prepare a quick recipe from the ingredients they used on that day.
Like the dal or pappu oggarane when they made sambar, and dal sweet simple one which is liked by kids and healthier too. I mentioned this in my blog for Sambar recipe.
Majjige huli has its own benefits along with easy at cooking. Not much of time consuming recipe is this Majjige huli, need to stir fry the peel and add to the grinding ingredients like coconut, jeera, chilli then add curd and season with mustard seeds.. a very easy to cook which is tasty and mild on stomach.
Majjige saaru or thambuli tastes good with hot rice and a papad.

I made drumstick sambar, ridge gourd palya or stir fry and ridge gourd peel majjige huli for this day and enjoyed our meal with papad.

How to make Ridge gourd peel curd curry with Step-by-step pictures
1. Wash the peel of ridge gourd well
2. Heat 1/4 teaspoon of oil in a pan and sauté the peel until raw smell is gone
3. In a mixer jar add ingredients to grind and also fried ridge gourd peel - grind till smooth
4. To this ground coconut add sour curd and salt
5. Add water to required consistency
6. Season with mustard, jeera, red chillies and curry leaves and add to the curry
7. Ridge gourd peel majjige saaru or curd curry is ready to serve with hot steaming rice

Yes, vegetable peels also are filled with nutrients also rich in fiber and antioxidants, infact skin or peel has more nutrients than the pulp inside. Always better to cook the vegetables with the skin else at least use them in the any other recipes like curd curry and chutney.
