Bendekayi palya / lady's finger stir fry ! who doesn't like? this is the only veg liked by all, mostly.. And lady finger stir fry made in this way enhances the veggie taste and its so delicious to eat with roti or chapati or rice.
Vendekai poriyal as called in tamil, made this way cut into small pieces and tossed in oil with onions and chilli powder gives tremendous taste to the poriyal, this is the simple method yet delicious side dish for sambar rice, rasam rice or roti...not to forget with creamy curd rice😋
lady finger is so tender and gets cooked just by tossing for few minutes, hence this lady's finger recipe can be considered as instant food 😊 and also this can become one of the items of the sides on the banana leaf meal spread. My friends mom would cut into very thin slices or rounds, the taste is good when made into palya..but I suggest to keep it little more bigger sizes, not to lose all its nutrients.
Those days grandmom's would insist to eat bendekayi very often specially growing children, they knew the benefits of this veggie rich in folate, vit C, calcium, magnesium, iron and many more. - Do not turn channa and urad to dark brown, keep them to light pink
- Fry onions and lady finger to color change to brown

How to make Bendekayi palya | Lady finger stir fry With Step-By-Step Pictures
1. Wash and cut lady finger to small slices
2. Heat a pan with 1 tablespoon of oil and add in mustard
3. When mustard splutters add jeera, urad, chana dal and sliced onions and fry for 2 minutes
4. Add lady finger and stir fry for few minutes until they change color to light brown and they are almost cooked
5. Add turmeric, chilli powder and salt and mix all together well
6. Stir fry all of them in low flame cover the lid until all the ingredients blend well together and switch off the flame
7. Stir fry lady finger is ready to serve
