Pula kura - How to make simple and tasty pulla kura 



Pula kura or Pullagoora is a very tasty curry made with greens (chilakarive) and the ingredients are kept very simple and those easily available anytime at homes. This is basically a tangy gravy that goes well with hot rice and a papad for a crunch.

No dal is used in pula kura hence this becomes a lighter meal for either lunch or dinner, and this is easily digested as this is tangy. Onions, tomatoes, chillies and tamarind is the ingredients for this pullagura recipe. 

I cooked pula kura on this saturday when I didnt have many items on that day for cooking ... you know weekends we almost finish up with all the veggies stored in refrigerator. Just found a small bunch of chilkarive (amaranth) so decided to cook this pulakura recipe. My grandmom and mom will make this very often especially on saturday's or any days demanding to cook quicker. I made mixed veg stir fry with few - left over cabbage, carrots and beans - this mixed veg fry combination for pullagura was good for an afternoon meal.

This pullakoora is usually made in lesser quantity, just enough for one time meal. you can also try this recipe with just small quantity of greens and go-ahead with rasam and curd.

Greens Pullakura | Pula Kura Recipe

Cuisine: Indian / South Indian

Cook time: 20 minutes



Ingredients for Pula Kura 

  1. Chilkarive soppu / Amaranthus   - 1 small bunch.
  2. Onion - 1 small 
  3. Green chillies  - 2 to 3
  4. Tomatoes - 2 small 
  5. Garlic - 8 to 9  pods
  6. Turmeric powder - less than 1/4 teaspoon

For Seasoning 
  1. Oil - 2 teaspoons
  2. Mustard - 1/4 teaspoon
  3. Jeera / Cummin - 1/4 teaspoon

Instructions  


1. Heat a pan with 2 teaspoons oil and add mustard and jeera /cumin

2. Add chopped onions, garlic, curry leaves and green chillies, give a stir 

3. Add chopped tomatoes sauté for minutes

4. Add turmeric and greens and sauté until greens and tomatoes are soft 

5. Add salt and 1/4 cup water and allow to cook 

6. Add tamarind and cook for 2 to 3 minutes

7. When greens  are cooked switch off the flame and cool and grind to a coarse paste

8. Transfer the greens to a pan and cook for 2 minutes on medium flame and serve


Note:

Adjust tamarind for your taste.

Donot add more water, this dish is a thick gravy.

Seasoning after grinding is not necessary.
