Nippattu recipe | South Indian Rice Crackers - EverythingTraditional
Nippattu is a popular snack from Southern India specially Karnataka Cuisine, which every household makes and stores to serve family members and guests any time. This is the one snack which can be easily made at home and liked by all at home. Rice flour, chilli flakes, peanuts, fried gram, sesame seeds are the basic ingredients to make this nippattu recipe. Nippattu is a deep fried but still believed as healthy snack - any snack prepared at home is healthy by default 😊
With a little variation in the ingredients each one can come out with a differently tasting all time favorite snack. This is also popular in Tamilnadu as Thattai and in Telugu as Chekkelu or garelu.
You can make nippattu in many ways with very little variation in the ingredients. Here I am showing a very simple - crispy - spicy one which can be prepared by any one including beginners easily.
Deepavali Sweets and Snacks :
Laddu, Rava laddu, Coconut barfi, Chakkuli, Kodubale, Nippattu, Benne murukku, Khara bhoondi, Jangiri, are some of the traditional Deepavali sweets and snacks along with Kajjaya in South. Kajjaya is a special sweet made on the deepavali festive day itself with fasting and all other sweets & snacks are made one or two days or even a week before if need to make in large quantity.

Ingredients for Nippattu recipe
- Rice Flour - 1 cup about 150 gms
- Fried gram - 1/4 cup powdered
- Roasted Peanuts - 3 tablespoons coarsely powdered
- Red chillies - 3 to 4
- Jeera / cumin - 1/2 teaspoon
- Sesame seeds - 3 to 4 tablespoons
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Oil - deep fry

Instructions Take fried gram and chillies into mixer jar and grind to fine powder - transfer to a bowl Then in same mixer jar add roasted peanuts to grind coarsely In a bowl add measured rice flour, fine powdered fried gram, coarsely powdered peanuts, sesame seeds, salt, turmeric powder and warm oil 1 tablespoon along with this add a teaspoon of full fried gram to make the nippattu crispier Mix all dry ingredients well before adding water Sprinkle water and bind together well - mix to a tight dough Take a small portion make a round and flatten it to round and thin and then deep fry in medium hot oil until it turns to brown and crispy

Note:
Adding a teaspoon of warm oil to the dry nippattu mix - gives crispier nippattu
Make this dry powder and store in an air tight container and prepare fresh nippattu whenever needed
Amount of sesame seeds can be increased which enhances the taste as well
Pat this on a leaf or greased butter paper - for beginners
Do not disturb the nippattu as soon as you drop them in oil, let them cook and turn them only when the bubbles from oil reduces
Just sprinkle water and mix the dough else you might end up adding more water than required
Keep some extra rice flour to add when the dough becomes over water - for beginners

How to make Nippattu | Crispy rice crackers with Step-by-step pictures
