Benne murukku is a crispy and soft chakli or snack from southern India. This murukku or chakli is crispy when bitten first and then it is soft and melts away in the mouth - hence i said its crispy and soft.
Super easy recipe to be tried by anyone. Butter which is the significant ingredient for this, is used while mixing the dough which when fried renders soft murukku. Rice flour, chana flour, jeera, sesame, salt and butter is used to make this murukku. Chilli is not used in this recipe to keep the butter flavor highlighted.
Benne murukku is absolutely exquisite, unlike any other murukku or chakli. Soft, rich and creamy flavor of butter is intact in the soft textured butter chakli. A perfect savory for Deepavali celebrations, prepare this in any quantity this will be first snack item to be finished in the first place.

How to make Benne murukku | butter chakli with Step-by-step pictures
1. Take a mixing bowl and add in all the ingredients rice flour, chana flour, fried chana powder, jeera / cumin, salt, hing / asafoetida and sesame seeds
2. Add in butter at room temperature
3. Mix all together well with your hand - so that butter gets coated well to the dry powders
4. Sprinkle water and mix the dough
5. Mix the dough to tight consistent
6. Take small portions
7. Fill in the chakli maker with the star hole plate
8. Press the chakli or murukku in the hot oil and reduce the flame to medium and cook them for few minutes in oil till they start to turn color. Do not wait till color change to brown - benne murukku is not brown , they should remain lighter in color
9. Hot benne murukku is ready - but wait utill they completely cool to become crispy - then its ready to be served - store in an airtight container once cooled
