Carrot palya recipe| Super Easy Grated-carrot stir fry
Simple and super easy recipe is this carrot stir fry made with a very few ingredients in few minutes - prepared with finely grated carrots. Healthy and tasty recipe acts well as side dish for rice and also can be filled in roti or bread and served as stuffed roti or sandwich.
Carrrots are good for eyes we all know so I try to add this veggie in almost all the dishes I make - like in paddu, uttappam, sambar, mixed veggie palya or poriyal, raita and also extensively use in carrot halwa, carrot palya ...
In this recipe we use grated carrots which in turn cooks faster and also this can be half cooked to retain its nutrition. Just finely grate carrots and stir fry - garnish with grated coconut and chillies, this renders great taste to this stir fry. Any day in this winter only hot rasam rice and this stir fry makes a filling lunch or dinner, and yes this was our dinner for today - rasam rice and carrot palya light and tasty dinner to enjoy on any winter days 😊

No water is added to cook carrots
Do not turn chana and urad to dark brown, keep them to light pink

How to make Carrot palya | Grated carrot stir fry With Step-By-Step Pictures
1. Grate carrots, chop green chillies
2. Heat a pan with 2 teaspoons oil and add mustard and jeera / cumin
3. Wait till mustard splutters and then add in Chana dal and urad dal saute until chana turns color
4. Add in chopped green chillies and curry leaves fry for 2 minutes
5. Add grated carrots mix well
6. Add turmeric powder, salt - fry for 3 to 4 minutes on low flame
7. Finely add grated coconut and finely chopped coriander leaves
8. Stir well and switch off the heat
9. Serve hot - for better taste
